Shroom Drop | What's in the box this week?
Every week, I deliver a fresh selection of fresh gourmet mushrooms to Five A Day in Ventnor, straight from the Isle of Wight. This week’s box is a colourful mix featuring Pearl Oyster mushrooms, Pink Oyster mushrooms, and some small Blue King Oyster mushrooms. Each of these speciality mushrooms brings unique flavours and textures to the table, and I want to share the best ways to cook them so you can enjoy their full potential. (boxes are 100g this week due to us just getting back to some weather/temperature normality!)

Pearl Oyster Mushrooms
Pearl Oyster mushrooms are a classic favourite among Isle of Wight mushrooms. They have a delicate, mild flavour with a slightly woody undertone. Their texture is tender but firm, making them versatile for many dishes.
How to cook Pearl Oyster mushrooms
Sautéing is the easiest and most popular method. Heat a little olive oil or butter in a pan, add the mushrooms, and cook over medium heat until golden and slightly crispy around the edges. Season with salt, pepper, and a splash of lemon juice to brighten the flavour.
These mushrooms also work well in stir-fries. Their texture holds up nicely when tossed with vegetables and a simple soy or teriyaki sauce.
For a heartier dish, try adding them to risottos or pasta. Their subtle flavour complements creamy sauces without overpowering the dish.

Pink Oyster mushrooms are striking with their vibrant colour and delicate fan-shaped caps. They have a slightly stronger flavour than Pearl Oysters, with a hint of seafood-like sweetness and a meaty texture.
How to cook Pink Oyster mushrooms
Pink Oysters are excellent when fried until crispy. Their thin edges crisp up beautifully, adding texture to salads or as a topping for soups.
They also shine when grilled or roasted. Toss them with a little oil, garlic, and herbs, then roast at a high temperature until tender and caramelised.
Think vegan bacon and you won't be far off!
These speciality mushrooms are a great way to add flavour to your meals. Their unique texture and taste make them a favourite for adventurous cooks. (colour fades during cooking)
Blue King Oyster Mushrooms
Blue King Oyster mushrooms are a smaller, rarer variety of the King Oyster family. They have a firm, meaty texture and a subtle umami flavour that deepens when cooked. Their blue-grey caps add an unusual and attractive look to any dish.
How to cook Blue King Oyster mushrooms
These mushrooms are perfect for grilling or pan-searing. Slice them lengthwise to highlight their meaty texture, then cook on a hot grill or pan with a little oil until golden brown.
They hold up well in stews and braises, where their texture stays firm and they soak up surrounding flavours.
These are usually considerably bigger but due to the weather limitations we have experienced here on the Island, these guys are smaller than we would expect them to be. Temperatures are dropping now so you'll be sure to get some chonkers next week!
