
🍄 This Week’s Shroom Drop: Summer Oysters, Pink Oysters & Little Lion’s Mane Clouds
There's an ongoing struggle in the Shroomery due to the hot weather but it is hopefully starting to cool off a little now!
We've grown our first Lion's Mane since the heat took over and despite them being tiny clouds, they still taste bloody wonderful!
Summer Oysters
Our Summer Oysters are putting on a proper show this week.
Delicate, frilly and beautifully fan-shaped, these mushrooms have a wonderfully savoury flavour and a lovely texture when cooked. Give them a hot pan and they’ll reward you with crisp, caramelised edges and a juicy centre.
They’re fantastic simply fried in butter or oil with garlic and herbs, but they’re equally happy finding their way into pasta, risotto, ramen, stir-fries or piled onto toast.
Basically, if there’s a pan involved, they’re probably interested.
Pink Oysters
Then we have the pink ones. Their vibrant pink colour is at its best when they’re fresh, and they have a rich, savoury flavour with a slightly meaty texture. They’re particularly good cooked hot and fast until the edges become beautifully crispy.
And yes, they look spectacular while doing it.
Try tearing them into pieces rather than slicing them too finely, then fry them with a little oil, salt and garlic. Add them to tacos, noodles, burgers, rice dishes or simply eat them straight from the pan while pretending you were only checking the seasoning.
Little Lion's Mane clouds
And finally, we have some little Lion’s Mane clouds.
These fluffy little oddballs are still young and compact, with that wonderfully shaggy appearance that makes Lion’s Mane look less like a conventional mushroom and more like something that has drifted down from the fungal weather system.
Lion’s Mane has a delicate texture and savoury flavour that makes it brilliant for pan-frying. Tear it into chunks, cook it gently until golden, and let the edges crisp up.
No complicated culinary wizardry required. Just a good mushroom, a hot pan and enough butter to make everyone involved feel slightly irresponsible.
