King oysters have a deep umami flavour with a subtle sweetness and a firm, juicy bite. Slice them thick and they’re almost steak-like; shred them and they pull apart beautifully like oyster or scallop. Absolute show-offs in a hot pan with butter, garlic, and a bit of attitude.
