Ingredients

- 150g enoki mushrooms

- 55g plain flour

- 1½ tsp smoked paprika

- 1 tsp garlic powder

- 1 tsp dried thyme

- ½ tsp salt

- Plenty of black pepper

- 1 egg

- 2 tbsp milk

- 80g panko breadcrumbs

- Oil for frying

Method

1. Prep the enoki: Trim off the woody root end and gently separate the mushrooms into small bundles. Pat dry if needed.

2. Make the smoky coating: Mix the flour, smoked paprika, garlic powder, thyme, salt and plenty of black pepper in a bowl.

3. Set up your coating stations:

- Bowl 1: seasoned flour

- Bowl 2: beaten egg mixed with the milk

- Bowl 3: panko breadcrumbs

4. Coat the mushrooms: Toss each enoki bundle through the seasoned flour, dip into the egg mixture, then press firmly into the panko.

5. Fry: Heat 1–2cm of oil in a frying pan over medium-high heat. Fry the enoki in batches for around 2–3 minutes per side, until crisp and deeply golden. (Or, whack 'em in the air fryer!)

6. Drain and season: Transfer to kitchen paper and sprinkle with a little extra salt while they're hot.

For the Air Fryer

Spray the coated enoki generously with oil and air fry at 200°C for 8–10 minutes, turning halfway through.

Maple-Garlic Dip

Mix together:

- 3 tbsp mayonnaise

- 1 tbsp soy sauce

- 1 tsp maple syrup

- ½ tsp garlic powder

- A squeeze of lemon

- Pinch of dried thyme

Serve immediately while the enoki are gloriously crunchy.
